a night of relaxation

I have a slight obsession with Blueberry Muffin Frosted Mini Wheats.  It’s been going on now for about 3 years.  I currently have 3 boxes (spares) in my closet and one open on the shelf.  Maybe addiction is a better word?  But my favorite is when the little mini’s have extra frosting on them – y.u.m.

I like to let them soak up the milk a bit :)

Today I stayed home from work.  I can safely say that I felt terrible when I woke up and it was probably mentally and emotionally induced.  I spent the day hanging out with Simon and we got some good quality time in today.  This evening my friend Emily decided the best cure for “the funk” is some wine, cheesecake brownies and a HOT TUB!

This wine is delicious by the way.  Emily described it best as “liquid candy”.  I will be buying it again the future

Last week I was feeling especially lazy and asked one of my staff members to do me a favor.  He did and I promised I would bake him whatever he wanted.  He asked for cheesecake but I don’t have a springform pan.  So cheesecake brownies were born!

Next up HOT TUB!  I had a coupon for half off and Emily had some money left on a gift certificate.  Our night of relaxation continued.  Neither of us had been to this particular tub before but it was AMAZING!  It was outdoors, had a fireplace and was HUGE

We asked them to turn up the temp a bit and turns out it may have been just a tad too much… haha, afterward we were both really light headed and Emily dive bombed onto the bench.  She was okay but it still worried me a bit.  We had a really good time though – and she was right, it was just what I needed.  We talked about my impending birthday (next week!  Great scott!  It’s called, “A Motha’ F**kin’ BLOWOUT!) and I got a bit emotional.  I’m excited to spend the night celebrating with my friends but it’s going to be a tough day.  Ok Aim, shake it off…

The next two days at work are going to be long and bit nutty.  My goals are to get at least one run in, have a better attitude and not have any emotional meltdowns – pretty good, eh?

Now, you should make these…

Gooey Cheesecake Brownies – Good Housekeeping

Brownie layer:

1 1/4 cups all purpose flour     1/2 teaspoon salt     3/4 cup butter or margarine (1 1/2 sticks)

6 squares (6 oz) unsweetened chocolate     2 cups granulated sugar     1 teaspoon vanilla     3 large eggs lightly beaten

Cheesecake layer

1 pkg (8 oz) cream cheese, softened     2 large eggs    2 cups confectioners’ sugar     1 teaspoon vanilla

preheat oven to 350*  line 9 x 13 pan with foil and grease foil

prepare brownies:  in small bowl, with wire whisk, mix flour and salt.  In a 3-quart saucepan, melt butter and chocolate over low heat, stirring frequently, until smooth.  Remove from heat; stir in sugar and vanilla.  Add eggs; stir until well blended.  Stir flour mixture into chocolate mixture just until blended.  Spread batter evenly in pan.

prepare cheesecake:  in medium bowl, with mixer at low speed, beat cream cheese, eggs, confectioners’ sugar and vanilla until well combined.  Spread the cheesecake layer over the brownies with a spatula

Bake until toothpick inserted 2 inches from edge comes out almost clean and top turns golden brown 55 to 60 mins (mine were done at 55 mins, maybe even a bit before so check them!).  Cool completely in pan on wire rack

When cool, lift foil with brownies out of pan; peel foil way from sides and EAT!

seriously, with a beginning like this, how could these NOT be good?!

  2. Wow, i don’t think I’ve ever busted out laughing at work so loudly! Fun night, happy I didn’t die. Gotta love our “romantic” evenings together.
